Yields 10 people
To make the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Place all the items into a pan, heat until it reaches a light boil, mixing until the sugar dissolves. Next, turn off the stove allowing it to cool down fully. Decant into an sealable bottle, close it and refrigerate it in the refrigerator, where it will keep for about a month.
To make Cocktail Base: Mix every liquid ingredients in a big jug, allow it to infuse for an hour, then filter it preferably using cheesecloth, to ensure it's completely strained.
When ready to serve: Pour 85ml of your premix into a mixing glass packed with ice, and agitate carefully for one minute to cool it down. Filter into a frosted cocktail glass or equivalent, top with a few cranberries and complete it using a brief mist of the essential oil over the top.
